Oh Fudge!
I try so hard not to swear.
And in the scriptures it teaches us to not swear by the sun, moon or things on the earth. And, I know that in that example it is to make an oath by the sun, star, moon or anything on the earth. But, I find that our English language is getting so limited by the words we hear around us that we are using substitutions for the real words. And, not using the richness of our words. See, I can't even find a different word for word.
I find myself so very guilty -- When I get really frustrated, I say, "Oh Fudge"
I make really good fudge, and I got this out of the Salt Lake Triubune some 30 years ago, and it is still my favorite.
Please enjoy, and don't swear - by the Fudge or anything else.
HELOISE'S BEST FUDGE
4 1/2 c. granulated sugar
1 lg. can evaporated milk
3 (6 oz.) pkgs. chocolate chips
1 (10 oz.) pkg. miniature marshmallows
1/2 c. butter
1 tsp. vanilla
2 c. chopped nuts
Put sugar and milk in large, very heavy saucepan and bring slowly to a rolling boil. Let boil for 8 minutes. Remove from heat and add chocolate chips, marshmallows, and butter. Beat only until chips and marshmallows are melted. Mix in nuts and vanilla. Spread in large, ungreased pan.

Clogged drains recipe
Yup, that's today's blog subject.
I can't tell you how many Holidays, have been an issue because of clogged drains. This is one of my children's favorite teasing items. Except the smoke detector incidents, they weren' my fault, they are just to sensitive.
I have given up peeling potatoes or carrots into the garbage disposal, and just use it for really liquid things. Which makes the garbage stack up. But, think of all that food matter that is helping the dump, How did I get onto this subject?
Right.
After having the plumber out, on holidays (price - doubled), or better yet having the husband and sons on the roof - always ice and snow covered - trying to snake the clog out.
A plumber friend gave me this recipe. And, it is excellent. PLEASE DO NOT DRINK THIS - IT IS FOR YOUR DRAINS ONLY.
1 CUP CLOROX
2 of your larges pots full of boiling water - a least a gallon each
I usually get the water ready, and then have my husband or someone who can lift that much weight.
I have then slipped behind them to the sink (either kitchen or bathroom) and poured in 1 cup of colorox (I do not measure, I just dump).
Then add the water in mass - that give the colorox weight, pressure and heat to dislodge the clog. Please have them turn their head, as the fumes can be somewhat loud.
I do this monthly, but I have forgotten to do this. And, with all the cooking, I felt inpressed to give you this info ---- I know it isn't something fun - but please, take 30 minutes, and do this, it will save your Christmas.

Wise Women Cookie Storage
At Christmas Time, I keep several cookie fixings in the Fridge or Freezer.
You know, how you keep walnuts, cocoa, sugar, peppermint candy, flour, all in abudance, just so you can make cookies anytime?
I was back in Virginia, for 6 weeks, and it was wonderful to see my grandchildren and be with them. However, I wasn't in my kitchen. And, yes, I shopped for all sorts of items I needed to cook with.
Then coming home, I asked my husband, "Do I have . . . ?", "Yes", he would reply. And on it went through 3 shopping trips (Sam's, Albertsons' etc.) So, now I am trying to remember - did I buy this . . or was that in Virginia?
Somehow, I didn't get walnuts - Which for me for Christmas is just something I can't live without.
I want to make Fudge --- No walnuts
I want to make Icebox cookies --- No walnuts
(these freeze in a roll and you can slice and then bake them.
I want to make a cheese ball - yup, no walnuts or sharp cheese.
I keep hoping that the Storage Fairy will come some night and help me out.
But, no such luck.
I wish there was a service - that I could leave a note on my door, which would run to the store and pick up some items for me, and just the items. Like when we lived in SLC and Winder Dairy would bail me out with Fresh ingredients, like cottage cheese, bread. Which sound crazy, but it kept me from going to the store and finding other things I didn't need, but thought I did.
Oh yeah! I had that service --- When we had teenagers, and in order to have driving privledges, that person ran all my errands . . . I guess they have all moved on to bigger and better things.
So, today I will make - Butter cookies and Peanut butter cookies ---- Yup, you guessed it. The peanut butter is rancid - I know it is just my hubby and me, and I'm not that crazy about peanut butter. But, you would think - I would have just a 1/2 cup of the stuff.
I send you my favorite giving cookie recipe - the IceBox Cookie -
ICEBOX COOKIEES - Iris Brown (my mommy in law)
2 cups brown sugar 1 tsp soda
3/4 cups shortening 1 tsp baking powder
3 eggs 1 tsp vanilla
3 1/2 cups flour 1-cup walnuts
Mix sugar and shortening. Add eggs. Sift dry ingredients and add to mixture. Make rolls and slice. Bake at 400 degrees until light brown on edges. Can be frozen in rolls before slicing.
Yes, I will be sure to pick up walnuts. Well --- What time does the store close?????

Pulling together
I love the Lion House Cookbook I guess it is now called Lion House Classic.
At the very beginning of the book it speaks about Brigham Young and his residence. Yes, that is where the Lion comes from, his nickname was the "Lion of the Lord".
This is a great Taffy, because you can pull it cool, so it doesn't burn your hands. My kids loved this, when we did this for Family Home Evening -- Yes, it was years ago, and they won't remember. But, we did.
After Vaughn and I were sealed in the Salt Lake Temple, (I am remembering years and years ago) we visited the Church Headquarters, where we were introduced to the current Prophet, Pres. Benson, and all the General Authorities. Vaughn's Mission President and His wife were the Host and Hostess for the Church. And they brought us to a room with all these leaders of the Church. It was a birthday party for one of them. And, Pres. and Sis. Wagstaff had made arrangements for us to drop in on this party.
We were surrounded by these great men, giving us their well wishes and telling us how gratful they were for our choices. This was a little hard for me to take in, even now, some thirty years later.
Then we had our Wedding Lunch at the Lion House. I guess that is why I always favor recipies from this book, this comes from the Deseret News article I found. (It is in the book also)

LION HOUSE TAFFY
2 cups sugar
1 1/2 cups water
1 cup white corn syrup
1 teaspoon salt
2 teaspoons glycerine (available at drugstores)
2 tablespoons butter
1 teaspoon vanilla
Pulling together: Celebrate Pioneer Day with an old-fashioned candy
Mix sugar, water, corn syrup, salt and glycerine in a heavy saucepan. Bring to a boil and cook until temperature is 258 degrees. Remove from heat and add the butter and vanilla, stirring until the butter is melted.
Pour candy onto a buttered cookie sheet. Cool until lukewarm and taffy can be handled comfortably.
Wash and dry hands thoroughly. Take a small piece of taffy and stretch and fold repeatedly until the taffy turns white. Form taffy into desired shape. Place on a piece of waxed paper.
Makes enough taffy for 10-14 people to share. -- Lion House Classics

Gift of Cocoa
As I prepare for Christmas - Yes, I am a seasonal cook. My thoughts turn to all the wonderful items to give as Gifts.
Why not some Hot Chocolate Mix?
This makes a huge amount, and you can adjust as you wish, according to your tastes. I run heavy to chocolate.
This is also great as a food storage item.
Hot Chocolate Mix
1 (25.6 oz.) pkg. instant non fat dry milk - or (10 - 2/3 cups)instant works best
1 (6 oz.) jar imitation powdered cream (coffee type creamer)
2 cups powdered sugar
1 (16 oz) can instant chocolate drink mix
Combine all ingredients in a large bowl. Mix well. Put into a large airtight container or several containers with instructions on how to use. Label and Store. Must be used in 6 months --- makes about 100 cups, give or take.
I then put the containers into the freezer. This keeps it from getting weavels.
Yes, I freeze all my mixes and dry goods. At any given time, you will find cake mixes, flour, sugar, etc. all in the freezer. All there for their 24 hour therapy.
For Hot Cocoa - I put between 2-3 Tbs. per 1 cup of hot water to make my cocoa.
I have been to LOTS of Girls' Camps, plus several children and this is one item always in my stash, a container of Hot Chocolate Mix.

Doorbell Ditching
This week Autumn is in all it's full glory. The sky is so blue, with the yellows of the aspens and cottonwood. Some day I will have a dress the color of that sky.
With Autumn starts my thinking of Christmas and all the preparations that begin. I start my Holiday cooking with this Caramel Popcorn. Yes, I Double this recipe in order to do Doorbell Ditchings.
You don't know Doorbell ditchings? - Let me educate you.
This an activity our Family does near the middle of November.
To Prepare, make the Caramel Popcorn and then make sure you have enough Bags for all those you love and want to surprise.
Find a free Family Home Evening and organize. Make sure everyone in the family selects a family to Doorbell Ditch - This activity needs to be done in the dark. Dad will drive the whole family in the car to the ditch-ie's home (at least 3 house away) when he stops the car's engine. All pile out and scope out the house - are there dogs? motion sensor lights? Then pick your spot to hide after approaching the door. Then select a doorbell ringer - this is the person who suggested the Family to drop the treat on.
Place the Bag of Popcorn on the doorstep - Press the doorbell
THEN RUN --- AND HIDE
Great memories can only be made this way ---- But, now it is only Dad and I - who will we Ditch? Act surprise if we chose your house.
CARAMEL POPCORN
1/2 C. Butter
1 C. Brown Sugar
1/2 C. Light corn syrup
1/2 15-ounce can sweetened condensed milk -(2/3 c.)
1/2 Tsp. Vanilla
5 Quarts Popped Corn - removing as many old maids as possible
In a saucepan, combine butter, sugar and corn syrup. Stir well and bring to boiling over medium heat. Stir in condensed milk; simmer, stirring constantly, till mixture comes to soft ball stage (234 to 238 degrees) Remove from heat.
Stir in vanilla.
Pour over popcorn and stir to coat. Spread out on Buttered wax paper, when cooled – put in Ziplock type bags. Will keep through the Christmas season, or you can make popcorn balls -- But, they get to tough for me.

Fred Wix
I owe a lot of my cooking skill to Fred Wix. Fred Wix was a radio host for Kall radio in SLC. He was just a delight to listen to, and he shared all sorts of cooking techiques with the listeners. Even before the internet he would publish his recipes for all. My Husband knew I just loved his recipes, so every week, he would drive into downtown SLC to the radio station and pick me up a copy of the week's worth of recipes.
I guess Fred Wix was so popular, that he had small cards published in the Dan's Grocery Store, and even after I moved away, my mother - in -law would pick me up a copy of his recipes, and mail them to me.
I have two loose - leaf notebooks full of his recipies. I love them so. If I am in a spot, and want to do something extra - ordinary, I turn to Fred Wix.
Can you stand another Zucchini Recipe? - Well this is the best --- It is even worth going to the store and buying zucchini to make it.
But BEWARE --- Do not tell anyone what is in it, before they have finished the first slice. I gave some to my youngest son On Saturday, and he said there were green things in there, and he wouldn't eat it.
I know I am going blind -- but really, You can't possibly see the zucchini --
As Fred would say - Enjoy!
Chocolate Almond Zucchini Bread – Fred Wix
3 eggs
1 c. sugar
1 c. brown sugar
1 c. salad oil
1 tsp vanilla
2 c. grated zucchini
1 c. chopped almond --- I substituted whole pecans
2 c. flour
2 oz unsweetened chocolate (I used dry coca powder with 2 tbs oil added)
1 tsp salt
1 tsp cinnamon (I used about 1 1/2 tsp – I like cinnamon)
1/4 tsp baking powder
1 tsp. Soda
Beat eggs until lemon color and smooth. Beat in the sugar, then the oil. Mix – then add chocolate, vanilla into egg mixture. Add dry ingredients the stir in the zucchini and nuts.
Bake in two well greased 9X5 loaf pans for 50-60 minutes/ Cool then turn out on a rack. Cool completely before slicing. Can be grosted with whipped cream or cream cheese with orange rind.
--- It is more of a cake than a bread.
The last I heard of Fred Wix -- was that he retired to Florida.
Yes, I ground up a very large zucchini (having removed the seeds) and put them in 2 cup measurements - into freezer bags just to have for this recipe --- but, there are only 4 packages. And, I just finished off the last of the loaf. Maybe I will make this again next week.

Starting UP ----
Just as squirrels start collecting nuts, I am doing my annual canning. From year to year things vary, one year it is jams and jellys, then apples, and this year it is Relish.
I have never experience the Zucchini in the car - if the window is down, probably because I would be the one who wanted them. So, when my found out that I make Zucchini Pickles and Relish - I think he was just trying to get rid of his Zucchini. And, when he calls, he asks me what I want for Christmas - I answer, Zucchini --- And, I hear him tell me he has one that is soon rolling into the porch and he is afraid it will crush his house. Yup - that's for me.
Here is my Recipe --- It is so easy, and yes, it uses the Zucchinies that are too large.
ZUCCHININ RELISH OR PICKLES –
5 Large zucchini - 18 inches long each
3 sweet red peppers - coarsely chopped or grated
3 green peppers- coarsely chopped or grated
5 large onions or 1 lb. pickling onions grated or chopped
1/2 cup salt
5 cup sugar
1 Tbs. turmeric
1 tsp. alum
5-cup vinegar
Ice cubes
2 Tbs. celery and mustard seed
Grate coarsely for relish or cube the size you want the pickles; combine with peppers, onions, - sprinkle salt and alum. Place ice cubes to cover top. Let stand 4 hours or overnight. Drain veg. Wash in cold water and drain again. Combine last 5 ingredients in large kettle, bring to boil. Add veg, simmer 20 min. Pack into sterilized jars. Water bath for 10 minutes.
When I made the Pickles, I made a half a recipe of the zucchini and a regular for the syrup. And, it came out - almost even.
It does need to sit and let the flavors marry for a few weeks. Yes, the cute husband is staring at the shelves -- I guess I should put a date that he can start eating the pickles and relish. But, what a great feeling, that I have accomplished something that my family can't wait to eat. Plus, the beauty of these rows of storage, is just wonderful.

I have never experience the Zucchini in the car - if the window is down, probably because I would be the one who wanted them. So, when my found out that I make Zucchini Pickles and Relish - I think he was just trying to get rid of his Zucchini. And, when he calls, he asks me what I want for Christmas - I answer, Zucchini --- And, I hear him tell me he has one that is soon rolling into the porch and he is afraid it will crush his house. Yup - that's for me.
Here is my Recipe --- It is so easy, and yes, it uses the Zucchinies that are too large.
ZUCCHININ RELISH OR PICKLES –
5 Large zucchini - 18 inches long each
3 sweet red peppers - coarsely chopped or grated
3 green peppers- coarsely chopped or grated
5 large onions or 1 lb. pickling onions grated or chopped
1/2 cup salt
5 cup sugar
1 Tbs. turmeric
1 tsp. alum
5-cup vinegar
