Whoopie Pies -Stacey Gray - YEAH!

My Daughter saw this recipe -- and she wanted to try them -- and wow are these good -- Love them Stace

Whoopie Pies -Stacey Gray -
2 cups flour
1 c. sugar
1/2 cup unsweetened cocoa powder
1 tsp. soda
1/2 tsp. baking powder
1/4 tsp salt
1/2 c sour milk
1/2 c water
1/2 cup shortening
1 egg 
1 egg yolk
Filling:
1/2 c shortening
2 tBS flour
1 TB sugar
2 tsp vanilla
2 1/2 cup powdered sugar
3 TBS milk
Preheat oven to 400 degrees
To make cookies -- Add all dry ingreat.  to a mixer -- mix -- then add the wet ingreat.  then add the egg and egg yolk  mix for an additional 2 minutes - until it is mixed well.
Drop the drop by a rounded tsp 2 inches apart onto an ungreased cookie sheet - makes about 3* dozen cookies -- then let them cook for about 6 min.  or until the top spring back.  
Let cool 
Meanwhile make the filling -- 1/2 c shortening, 2 tbl sugar and 1 tbl sugar and vanilla -  mix with electric mixer on medium speed for 30 sec.
Slowly add 1 1/4 c powdered sugar -- add the milk -- gradually add the remaining powered sugar
My Daughter made this recipe -- she said to mix a little more flour into the cookies -- *an make them small --
to assemble them frost one side of the cookies and then top them with the remaining cookies -- 
These are really good --

Oatmeal cookies --- Love them.

MONSTER OAT AND RAISIN COOKIES – Monster cookie book
2 1/2 cups regular oats                     3/4 cup shortening
3/4 cup packed, brown sugar          3/4 cup sugar
2 eggs                                                  1 tsp vanilla
1 1/2 cup flour                                     1 tsp. baking soda
1 tsp. baking powder                         2 tsp. cinnamon
1 tsp. allspice                                      1 1/2 cups dark raisins
Cream shortening and sugars.  Add eggs and vanilla.  Sift together dry ingred. and add to creamed mixture.  Stir in oats and raisins and mix well.  Bake at 325 degrees until golden brown.

Now you know me -- I love chocolate -- so add at least 1 1/2 c. chocolate chips  -- so you will have a massive amount of chips-- or split it with the raisins.  You will always enjoy these --

Monster Chocolate Chip Cookies -- Yeah Me!


I discovered this recipe alot of year ago.  They are my favorite all time cookies --- 

So, I am a little nervous putting them out -- Because now you will have the recipe too -- OH Well ! 

Cookies for everyone -- I hope it cools down for me to make some  -- they sound really good.

MONSTER CHOC. CHIP COOKIES – Monster Cookie Book
1/2 cup (1 stick butter, soft)              1/4 cup shortening
1/2  cup brown sugar                       1/2 sugar
2 eggs                                                 1 1/2 cup flour
1/2 tsp. baking soda                         1/2 tsp. baking powder
1/2 tsp. salt                                         2 cups semisweet chocolate chip 
2 tsp. Vanilla
Cream butter and shortening.  Then beat in brown and regular sugar, until fluffy.  Add the eggs one at a time.  Beating well after each; then beat in the vanilla.  Sift together the dry ingred.  Add into creamed mixture, blending well.  Add the chocolate chips.  Bake at 350 degrees. Until brown on edges.
Add more flour – if the cookies are too flat

Time out for Congo Squares ---

I have no idea where I got this Recipe.

Or why it is named after a country -- 

I don't make this very often -- because I don't need these around --- because they are so goooood.


Congo Squares - Carol Jean Brown
Cream:  2 cups brown sugar          
  1 square Butter
           2 eggs
Mix in: 2 1/4 cups Flour                   
1 tsp. Salt
               1 tsp. Baking Powder          
1 pkg. Choc. Chips
               1 cup Nuts
Spread in 13 X 9 pan.  Bake at 350 degrees for 30 min.

YUM - Waffles to go

I met Veronique quite  a while ago.  But, the story goes - I had cookies that could be cook in the waffle maker.

Yup, no eat from the oven during the week.  Veronique told me that she had a recipe that was much better.

Wow!  What great waffles.

So, for you who need waffles to go, early breakfast, or just snack.  Here you go, waffle that can be taken anywhere.

(Yes, I made these for my kids during early morning Seminary)

Belgium Waffles  - Veronique 
Separate 9 eggs, beat the whites until they are stiff
In another bowl, beat all the yokes plus 2 cups of sugar.
Beat until light in color.
Add 1 lb. Butter, softened
1/4 tsp salt 
4 cups flour
1 tsp of vanilla
Cook in a waffle iron.  Cook until brown.
They are really fragile while they are hot.  
When they are cool, they won’t crumb as easy.
Store in foil or tin box.
